Broccoli and Apple Salad

Crunchy, Sweet, Healthy. Just the refreshing pick me up to revitalize your day. Contrasting the sharp, juicy crunch of our Australian apples
with the refreshing taste of a traditional salad; packed with vitamins, nutrients, and most importantly flavour - a meal that both your body and taste buds will be grateful for!
Serves: 6

 

INGREDIENTS

2 medium heads broccoli

1 large pink lady apple, thinly sliced

4 radish, trimmed, thinly sliced

80g baby spinach

1/4 cup apple cider vinegar

2 tablespoons extra virgin olive oil

1 teaspoon wholegrain mustard

1 tablespoon finely chopped fresh chives

1/3 cup chopped pecans

 

METHOD

Step 1

Remove florets from broccoli stalks. Cut 1 stalk into matchsticks. Discard remaining stalk. Place broccoli florets and stalk, apple, radish and baby spinach in a bowl. Toss to combine.

Step 2

Place vinegar, oil, mustard and chives in a small bowl. Season with salt and pepper. Whisk to combine.

Step 3

Arrange broccoli mixture on a platter. Drizzle with dressing. Sprinkle with pecans. Serve!
